I saw Joe just before Christmas when he hand-delivered his famous "Pulla" or Finnish coffeebread. He had been tweeking his recipe for years and honestly this was his best. It had just the right consistently - heavy but moist with lots of cardamom. I never had the opportunity to tell him how good it was. I hope his daughter passed on the message. Although Joe had gone through so much medically, he was always up beat and positive. We talked about the things he loved-his children, his grandson, his dog Cooper, and of course Ireland. A quote from Abraham Lincoln applies to Joe- "It's not the years in our life that count but the life in our years". Joe lived his 63 years to the fullest. I'm sorry it couldn't be longer Joe!
